The Nurture Girl- Orzo Pasta Skillet

1 cup mushrooms (chopped)

1 cup spinach (chopped)

1 cup tomatoes (1 can diced petite tomatoes)

1 Tablespoon olive oil

1/2 cup onion

1 cup orzo pasta

1/2 lb. ground beef, chicken or turkey

1-2 cups beef stock

1 garlic clove

salt & black pepper to taste


Directions:

Heat a pan at medium heat with olive oil and sauté mushrooms, spinach, tomatoes, onions and garlic until the vegetables softened. Add the protein of choice and add orzo pasta. Toast the pasta to a golden brown color. Add the beef stock 1-2 cups (Note: add the liquid slowly because you can always add more but you can't take away liquid. Bring the dish to a boil and reduce the heat to a simmer. Cook the dish with the pan lid for 20 min. or until the orzo is tender on medium heat( taste for seasoning before serving the dish). Serve the dish in a large family size serving bowl. Time: 30 min. Servings: 8
