1/2 cup mushrooms
1 pkg. frozen cauliflower rice
1 Tablespoon fresh basil
1/2 cup cherry tomatoes
1/2 cup shallot(onion)
1 Tablespoon olive oil
1/2 garlic clove(finely chopped)
1 cup vegetable stock
salt & black pepper to taste
Homemade Vegetable Stock
1/2 green pepper
2 green onion stalks
1 Tablespoon black peppercorns
1/2 shallots(onion)
8 cups of water
Directions:
Heat the olive oil in a skillet. Add the vegetables and stir under tender. Slowly add the vegetable stock and seasoning to the dish. Cook until the vegetables are tender and the liquid is absorbed. Time: 30 min. Servings: 8
