Superfood of the Month ~ Spinach

Spinach grows best in the spring and fall when the

temperatures are cool. The health benefits are Vitamin A

which are important for the immune health, vision, and

reproduction. It has vitamin C and fiber which helps in a

balance lifestyle. Vitamin K is vital for healthy bones and

blood clotting. It is a great source of magnesium which

regulates nerve and muscle function. Also, spinach has

beta-carotene to improve skin elasticity, protect against

high blood pressure, and heart disease. This superfood is

great for women's health and it can be incorporated in

smoothies, salads, saute', and vegetable medley.

Superfood - Spicy Saute' Spinach Recipe




Ingredients:

1 bag of fresh spinach

2 Tbsp. olive oil

2 chopped garlic cloves

2 chopped onions

1/2 tsp. red pepper flakes


Directions:

Preheat the olive oil in a pan over medium heat. Cook the

onions and garlic cloves until the mixture is tender. Add the

spinach and red pepper flakes. Cook the spinach for about 10-

15 min or until tender.
