The Nurture Girl- Sausage and Rice Skillet

1/2 cup shallots (onions)

1 1/2 Tablespoon parsley

1 Tablespoon garlic clove

1 cup rice

1/2 cup feta cheese

1/2 cup kalamata olives

2 cups chicken stock

1 teaspoon cumin

1 teaspoon turmeric

1 lb. sausage (mild Italian sausage)

1 Tablespoon olive oil

1 teaspoon dried oregano

salt and black pepper to taste


Preheat oven for 350 degrees. Roll the sausage into balls. Heat the olive oil in a skillet. Brown the sausage at medium to high heat in skillet and set sausage aside. Add shallots to the skillet and cook until tender. Add the garlic. Add the rice and toast the rice before adding other ingredients. Add cumin, turmeric, salt, black pepper, and chicken stock. Bring to a boil and lower the heat to medium low. Add the sausage back into the skillet and simmer. Cover the skillet with aluminum foil and place it in a 350 degree oven for 15 min. or until the liquid has evaporated in the skillet. Remove the skillet and add the cheese, olives, parsley, and oregano to the dish. Time:45 min. Serving: 8
